I know this is from the runner bubble, but Alan Webb is not so intelligent (makes me wonder if classes had anything to do with his dropping out of Michigan and not just poor running). Also, Ben Wallace and Marvin Harrison aren't the brightest crayons in the box.
Some former athletes that seem to be fairly intelligent include Tiki Barber, Mike Golic, Sean Salsbury (although not a stud quarterback), Greg Anthony, and Troy Aikmen, to name a few.

I know this statement doesn't apply to all, but I would imagine most pro golfers are relatively intelligent/educated. Golfing is expensive, and since you have to play golf from an early age to be really good, most golfers parents have money. Therefore, most golfers were sent to the best schools, and are well-educated. I know this isn't always the case, but I bet it is moreso than football and basketball

Almost any of the doctors would qualify. Roger Bannister (who was knighted for his medical work, not his running), certainly.
Frank Shorter is pretty smart. Ditto Craig Masback (don't start--Princeton UG and Yale Law is a helluva combo).
Hard to come up with dummies. (I remember learning in grad school that there's actually a pretty solid positive correlation between athletic ability and IQ.) Gerry obviously isn't the sharpest tool in the shed, but I think it's more a question of character disorder--he most likely has a three-digit IQ.

Outside of running? Well, David Robinson (is that the name? Basketball player out of USNA) had something around a 1400 on the pre-recentering SAT. I'm told that Kobe Bryant is also pretty bright.
Actually, I suspect it would be difficult to find many players in US pro leagues who are truly dumb. Uneducated or uncouth, maybe, but not unintelligent--I just don't think many people would work up to the highest levels in a physical activity, if they didn't have some smarts to organize and direct their effort.
