Should I just do base mileage and cut back on the calories? Ideally I want to be able to give it a go 6 weeks from now.

You could also have said sub 20 and not referred to parkrun as cross-country if you wanted to explode my pea sized brain.

What is your running background? Anyway, I have a good test for you to see if you have a chance.
Warm up, go and run a mile at 6:00. Tells us how that goes. Then we will tell you how to train for it adequately.
Bear in mind, to go under 18:00 you have to go a little bit faster than 6:00 ... 3.1 times without stopping.

Yes that's the case in my town. They're all in parks on paved paths. In fact I didn't know any weren't!
Your body composition, body mass distribution, and BMI matter, not your raw weight.
Are you very lean with big muscles and little fat?
Subcutaneous or visceral fat?
Pot belly or side fat or back fat or thigh fat?
BMI?
Tell us these are we should be able to take a good guess at your 5k potential.

Its very very hard to provide any kind of useful guidance without more detail. What's your running background, how much do you train, what's you 1 mile PB etc etc. Are you a 10k runner looking to improve at the short distance blah blah.
I live about 200m from the finish line of Kesgrave parkrun, and run it most weekends when I'm fit. Its *all* cross country, with a muddy forest section for the last 800m. My PB there is 18:47 - but I've not raced a track 5k (or a road one properly!) to be able to compare times. I'm ~85kg, 6'1", fairly lean (but with a history as a fatty so still wobbly in places!). 10k PB is 40:50 (a bit soft). I managed to dip under 19 mins twice in December off the back of a marathon PB in October (3:27).
I think getting under 18 would probably take a good 6 months of quality focused training for me.
Most parkruns are actually on paths and not xc
