Zach Bitter is impressive. So far he appears to be an anomaly as a very high fat, very high meat consumption low carb ultra champion. But even he eats a lot of carbs during a race. So much for it being "poison", right? I mean "poison" shouldn't be able to play a major part in fueling you to a 100 mile AR, right?
But as far as playing the my diet guy can beat your diet guy game, what about these straight up vegan, or vegetarian/nearly vegetarian (eat no meat or rarely eat meat), HIGH CARB ultra-runners, who have subsisted on diets of at least 95% or higher plant foods, and who have had careers or recent performances at least as good as Bitter, or better than his career, or beaten him head to head recently.

the KING of ultra-running. I have read several sources that claimed he ate no meat, and while possibly not vegan, was a "strict vegetarian." A huge preponderance of his calories came from NON-ANIMAL nutrition. "NO read meat."
