I'm curious if OP's perception of "beer is for slobs" is people drinking bud out of a can, or hipsters drinking craft brews at an urban bar? Beer is an incredibly common drink among US adults, but hey maybe that's the point he is trying to make - most US adults are slobs.

I probably average 1.5 beers a day and 2.5 8 oz. coffees a day (black, no sugar)

Just to be 100% snobby, coffee stouts and coffee porters don't traditionally have actual coffee in them. They just use roasted malt. They do not actually contain coffee or caffeine.
I say traditionally because you do have breweries experimenting with adding actual coffee beans these days.
To answer the questions... Coffee in the AM and beer in the PM (Fri, Sat, Sun)

If I remember correctly, the Dwarves were fans of Mead. I think that comes from them being based on the Norse. Mead is like a honey-wine, but is strong and thick.
You didn't ask me, but I like stouts and porters due to their robust taste. Some are actually quick refreshing. There is a local brewery in my city that serves an English Porter that is only 2.3% ABV. They serve it in 20oz glasses and it is the perfect mid-day drink after a long run. I am getting older, and if I drink more than 3 strong IPAs I am going to want to go home. Lower ABV stouts and porters are great for session drinking with friends. A few pints and you can still be fine.

Both! Coffee morning and early afternoon, generally IPA of some sort in the evening. Though lately I’ve trended towards some high quality Kolschs.

Nothing else is needed.
Carlos Lopes of Portugal would mix one tablespoon of coffee and one tablespoon of water together to make a syrup. He would eat it before marathons and 10,000 meter races. Don't know if he did it during the Olympics or his world records but he did when he ran the Cresent City Classic.
I can only imagine how fun it is to be around someone that is such a tight @ss that they won't drink any alcohol or coffee. What a terribly small existence.
