not all chinese people eat like that. its a very large country. they eat very tiny amounts of the stir fry.
In regards to OP.... the problem is many processed foods have added synthetic chemicals to make the product last longer. Not only does it last long on the shelf, but in your body too. When fats are modified, there is no natural liver enzyme that recognize them to break down.
You can google the study of monkies fed same amount of calories , having same activity, yet the group that ate transfat gained weight.
The second clause is over consumption and increased sedentary lifestyle. Say people eat pancakes for breakfast as if they are a lumber jack manually axing a forest, when the truth is they are going to some desk job that lets them facebook all day
