It seems like you made a decent effort but it didn’t seem to click and the general culture won out. Your kids are adults now and their health is completely their responsibility. If this is the path they want to go down, so be it.
I always found sport and exercise fun, and I like to compete, so it was easy for me. That’s the thing, you have to find a way to enjoy it to make it work. I like riding my bike. I like slowing things down and going for a walk because it provides a bit of mental and emotional benefit. I like hiking through the forest.
The choice is very simple, actually. Eat healthy and be active and feel good, or don’t and increase your probability of health issues and feel like crap. If you are physically and mentally capable, it’s that simple.
This is the problem in a nutshell. People know being sedentary is bad for them longterm. People know lots of the food they eat is bad for them longterm. But being taught that and having good examples is not enough to change behavior.
At a basic level, a big percentage of people can't consistently make decisions based on longterm benefits. Especially when there is so much effort by industry and advertising to make being a couch potato and eating pre-prepared junk food so easy. Deciding things based on a shorter-term time frame probably makes sense from an evolutionary standpoint so there may not be any acceptable solution. No one would accept a society that forced people to be physically active or that banned all unhealthy food. A Wall-E future may be inevitable.

Perhaps there could be a program where high schools have an elective, "Military Fitness," geared for students who plan on joining the military after graduation. It could include any kid, regardless of their military aspirations, but is designed for future soldiers, sailors, etc.
This program would specifically train running (groups and alone), pushups, pullups, crunches, situps, etc. To better simulate boot camp, they could form up before school, outside, at 0600, for example.
I'm aware of high school ROTC, but I'm not sure if they have PT programs. Plus, when I was in high school, ROTC was for nerdy kids who wanted out of PE class. Not sure if that's still the case. College ROTC was another story -- those kids were gung-ho competing for military commissions.
I'm prior Army, not employed in the school system in any capacity, so I don't know how a program like this could be implemented. Just a suggestion.
The JROTC and ROTC programs that I know of do physical training. I’m sure it’s program dependant though.

That was in 1940. Now the problem is over twice as bad.
I am an instructor at several police academies out west and have noticed a similar disturbing trend among the new hires. Some can't do a single pull up, can only muster a couple of real push-ups and couldn't run a mile faster than 9 mins. if their lives depended on it. A lot more obesity and we are talking young (19-23) adults here. Many of them don't make it past the 1st few weeks. Not good.

Newsflash! The Army in general is obese and horrible at athletics. Go look up the standards a MAN can pass the PT running 9:00 mile pace and a women needs to run 11 min miles. The company lost all regard for fitness and health when we went to war after 9/11, desperate for recruits / morons to sign up we lowered the standards to meet the obese population.
Get your facts straight Newsflash Bro. Males need to run 15:54 two mile and females need to run 18:54. That is the minimum standard of 60 percent to pass an annual physical fitness test for 17-21 year olds in the Army. Although still not fast, much faster than your false information. So if you can run a sub 26 minute 5k (male) and a sub 30 (female) you can probably pass the Army PT test. So yes, it doesn't take much aerobic fitness to pass but somehow it is the most failed, hardest part of the physical fitness test. Unfortunately for a lot of our nation people have become a couch potato, junk food eating, pot smoking disgrace.
