Funny, I literally just finished creating a list of activities for our team camp next week.
Yes ultimate, sharks and minnows and similar games are fun and incorporate running, but it's tough to fill 2-3 hrs with running games every afternoon.
I try to include team building activities as well. Google "teamwork games for teens" and there are several good sites with many 10-120min games.

I use to go to the Wisconsin Cross Country Camp of Champions with guys from my high school team. We would always go to this one smoke shop in Madison where one of the guys would always buy some weird shit. One time it was this penis pokey book, another time it was some tiger wood's protect your wood condoms, etc. We would also do these milk chugging contests, throw people's mattresses outside, and try to gift wrap people's rooms. Normal stuff like cards and ultimate frisbee were also fun.
spikeball is fun but pretty spendy if you just plan on using it for team camp.

- this one is really fun: divide them into groups then each group has one kid lie down on a picnic table. Everyone else decorates that kid with 2 bottles of whip cream. They can be a mermaid, Santa Claus, Donald Trump... the possibilities are endless with a little creativity.

Ultimate frisbee is a good one.
Let's be realistic here. Assuming both the boys and girls teams are going to camp, they can simply amuse themselves with their hormones during down time. Make them get in their workouts and then cut them loose to hang by the pool all day. Just watching the boys act like idiots around girls in swim suits will be enough to amuse the coach as well.

Are you looking for active games that involve more running? If so, be careful with overdoing it. Ultimate is great, but if then they are running more in addition to whatever actual running they are doing for training.
If you are talking board or card games, just have kids bring their own.
Here is a question for those who hold camps. This was not something my high school ever did.
1) What is the purpose of the camp? Do the kids understand the purpose? One coach I talked with years ago about camps said the first year he had a plan but did not tell the kids. He wanted to build a culture (he was coming into a fledgling program). At the end of camp he asked the kids what they thought about the camp. Several mentioned that they felt closer as a team than the previous years. The coach was very happy as that was his main purpose.
2) How do you balance training and down time? I remember one new coach (different than above) that overdid the running and other activities and the kids came out of the camp a little overcooked.
Is there a rule against attaching a helium balloon to yourself while running a road race?
