When I became an octogenarian, I stopped doing speedwork.
Depends entirely on the person. Go to masters track.com. some people never quit training to race, or at least showing up at races.

Creeping up on 60. Running hard and racing is still fun. Intervals? Sure, a bit to sharpen up for a half marathon or 10k.
The question is, are you having fun? Do you feel motivated? That's your barometer.
I'm 30 and my body hurts. Chronic Achilles problems. Chronic hip problems. I have been running in pain for almost 3 years straight, and nothing I do helps.
I'm considering giving up the speed work.
When the results no longer justify the effort.

For most of the college runners I knew, immediately after college ended. Some get back into it later, but most don't.
Depends what you mean by speedwork.
There's a big difference between 400s and 600s at half mile race pace or faster with your college team, and a few friendly repeat kilometers or miles with your local running club.
I always loved doing quick repeats on the track for no other reason outside of loving the feeling of running fast. In my early 30's I started getting injured. At 39 I don't dare do sprints. I usually F something up.

I am 37 and I don't really do them anymore. I basically just run now. Race infrequently. I run a lot, though.
I am never going to PR. All of my track times from college are way too fast and I got into marathons shortly after college, so they are too fast as well. SO basically it would just be age group stuff I guess? But the problem with running is that it is timed. So even if you win a race you know that you are going slower than you used to...
I ran two Halfs last year and the first one I just ran long runs prior. 1:14 and change. The second one I did long runs and about two months of speed work (800 and mile repeats) mixed in. Ran 1:16 and change. So it didn't even help, hahaha.
Anyway, if I feel like running fast I'll just hammer a run.
