I think I would run the first mile at about 17:30 pace - roughly 5:40 - and try to finish faster than you started. Going from 19-flat to well under 18 is significant over a year's time.
FYI - that headwind you mentioned is pretty much irrelevant as you got the benefits of that wind for the other half of your workout. Think of it as a workout for you mentally more than anything.
