The answer is a sighthound. We can argue which sighthound would do best over 5K, but if you aren't in the sighthound family you're kidding yourselves.
Having spent significant time in Europe, and running dozens of Windhunds, I will tell you this, the answer is either a Saluki, a Borzoi, or a Sloughi. If Polish Greyhounds (which aren't greyhounds) are included, they belong in there too.
I've never seen an Azawak run (or seen one at all for that matter) but have heard they are also quite capable but their high hip placement in relation to their back makes me think they may not have the body structure over that distance but would be the fastest over a short distance. I've also heard there is a Borzoi-Whippet American breed that is now outpacing many Windhund in Europe, but I know nothing about those mutts as they didn't exist when I was into the sport.
I think the answer may come down to the conditions, footing, and altitude of the race (some have greater lung capacity and do better running at high altitude and on snow, ie the old St Moritz races on the lake in winter).
Having said all of that, the Borzoi, because of it's additional lung capacity (deeper, longer chest) over the Saluki, would be my guess.
A borzoi is bigger so that it can tackle a Wolf. A Saluki doesn't have to do that. Smaller is better for non-sprint races.
There's no question that a Saluki would be much quicker over 2-3k, that's what they usually race in KSA and UAE . . . but I've never seen one run 5k and I believe they may actually not live if ran that far (I'm being serious about this). I've seen many many Borzoi run 5K without issues. I know 2 Saluki owners in KSA, I'll ask them if they've ever ran their dog 5k.

Pretty heat adapted animal. Two coat choices as well. If the Saluki couldn't handle the heat of an extra 2k then the Sarawakh would be the next best bet.

Only because the pointer would slam to a stop and kindly point out all the birds the viszla ran right past. Theres a reason there are no viszlas on the professional field trial circuit.
Working dogs, eg kelpies and border collies who round up sheep. They run all day, massive engines. They'd take a Weimeraner over 5km.

Agreed Malmo, but kelpies (an Australian sheep/cattle dog) would I think beat border collies. They are just incredible, have massive motors, and are tough as teak.

I am sure you are not into hunting with your viszla and have never been around a field trial EP. Viszlas are the softest dogs of the hunting breeds. Quick yes but not for sustained distances like a 5k. A field trial EP will run for hours straight full speed unless of course it stops to point.

That would be 10:08 for a 5k, over mud and obstacles. I'd like a setup like that to "drive" around town, go shopping etc. :)
That video was awesome. I was just planning to watch a minute or two but ended up watching the whole thing.
I had two weimaraners and would run with them. They loved it - I would grab the leash and they would go crazy. I attached it to an old belt so I could run hands-free. They would almost always be pulling the whole time even as they were obviously trotting along comfortably.
We did a dog jog 3000 meter race, where they pulled me along to a 9:30 even though one of them had to poop midway through. Probably lost my chance at a PR. I couldn't have broken 10 minutes for a 3k by myself at the time.
Once, just to see how fast they were, I did a run with my bike on a 10 mile trail, with a similar setup to the one in the video. It's the main bike trail at First Landing State Park in Va Beach if anyone knows - flat, wide well marked, 5 miles out and back. They knew it well and I let them lead and run at their own pace, no encouragement. I can't remember the exact time but it was in the high 40s, maybe 48 minutes or so. That was their comfortable pace.
