English Pointer is the correct answer. Shorthairs have been crossbred with real pointers so many times that they are now just watered down EP's anyway.
This thread is the equivalent of asking "what non-elite runner will run NYC the fastest?"

Some mutt will be the fastest by cheating, and an anonymous chihuahua named 'PitBull' on LRC will threaten him if he doesn't come clean. Everyone barks about it, but nothing ever happens.
A Greyhound is a pure sprinter. They would get lapped by a Saluki in a 5k.
None of those other dogs would contend on ANY surface. You guys are dreaming.

Weldon has a vizsla or at leats a vizsla mix. Over thanksgiving we were thinking about timing it. We have no doubt she could beat the WR for the mile. We were debating whether she could break weldon's 2806 10k pb without training. She's simply been doing base work at like 20-30 mpw. But that's weldon running 30 per week. Some dogs will run to the death if coaxed by owners. I see it pretty much every summer. Some guy will bring his dog for a big group run at 5 pm on a hot July evening, and then is surprised when he has to rush it to the vet and on more than one occasion I've seen the dog not make it. Some dogs on the other hand will just sit down and stop. In the winter you obviously don't have the same risks of heat exhaustion as you do in the summer, but I would still be careful
I have a golden doodle. I have done partly what you said you wanted to do. She is 60 lbs. Ran 9.1 in the 100m. means top speed of about 30mph. following us in a fourrunner on dirt roads, she stayed with us at 20-22 mph for just short of 1 mile. About 2 years ago. I ran with her for 10-15 miles a week for 4 weeks and she was able to break 16 in a 5k with me. Only thing holding her back was me.
might not be as fast as a Vizsla but I think you should put a gopro on the dog and see what could be done!

I'd put my money on an Alaskan husky, although that might be considered a specialty racing dog.

We own a Vizsla and it's been amazing to see her natural ability and desire to go for runs. She is still young so we only run about twice a week for a mile or two at a time to get her used to being on a leash. When we take her to open space off leash she runs continuously until it's time to head home. Next time we go I'll throw a GPS watch on her collar and see how fast she runs just roaming the fields on her own.
Long term we'd like for Neely to do some 5k's and 10k's with her for fun. Are there actual dog/owner road records recorded anywhere?
I just adopted two English foxhounds. They are not the fastest dogs for top speed but they can run really close to max speed for a long time. I wouldn't think a 5k would be the event for them--too short. Over 30+ miles they might be competitive with some of the breeds mentioned.

A border collie really isn't a long distance athlete. In Asutralia, they bred the kelpie as a sheep dog because border collies aren't bred for the kinds of distances apbeing an Aussie sheepdog requires. Little small hillside farms I. England and whatnot compared to sheep stations in the outback that are measured in square mileage.
Side note, the town I grew up in Australia used to have a House Dog Derby once a year, at the greyhound track. All non greyhounds were welcome to race. It was a classic. Mostly ended up in dog fights, and the majority of the dogs wouldn't chase the mechanical bunny .. Particularly those dogs bred to hunt.
I have a border collie that runs everyday loose w/ me on trails - 6-10 miles - he is pretty impressive - the border collie would be tough to beat especially in the 10K to 21K
