So our coach misses the bus and shows up at our meet two hours later with his girlfriend. Can't keep his eyes open and leaves after the mile. Both the AD and the coaches have warned us about going over the coaches head. So what is our next step?

Maybe he has diabetes or some other illness.
Girlfriend told us he had too much
I'd tell the AD, if you were hung over how would he react?
Was he drunk at the meet? If not, move on.
I used to know a lot of coaches that would bring along a bottle of Scotch especially during a cold XC meet. I even knew one guy that used to do acid particularly at the indoors.
Problem is that LD running is just not that interesting to watch and you need something to make it more lively.
A track meet on dec 5th? Doesn't indoor start after the new year?
No, big East Coast meets have started.http://va.milesplit.com/

Do nothing. Turning up hungover isn't great but you have no idea of the circumstances.
Now if happens again next time then you need to speak to his superior.
I'm betting it was this meet.
Have you never shown up for work hungover?
Unless it's a recurring problem then I think you should look past it and get on with life. Like another person said, you don't know his circumstances.

Are you people serious? Coach misses the bus, shows up 2 hours late, and leaves early. You should talk to your Head coach and if this is the same guy talk to the AD. Maybe partying and showing up hungover isn't a big deal but but if it impacts your job it is.

You should tell your parents and you parents should tell the AD. This guy is a d-bag and shouldn't be coaching.
It seems to have already started, per this thread:
Look at this as your 'golden ticket'. YOU are now the one in power. I recommend having a one on one meeting with the drunkard. Let him know what you know and find out what remaining as the coach is worth to him. Use his transgression as a means to enrich yourself. Tell him the only way you remain silent is if you feel as though you are fairly compensated. Give him a list of your demands (i.e. money, some time with his girlfriend, etc). Good luck and enjoy the benefits!!
The AD has warned you about going over the coach's head? Since the most obvious path above the coach is to the AD, is he saying he's empowering his coaches to do whatever the hell they want and he doesn't want to hear about it?

OP please explain the circumstances around AD saying "do not go over your coaches head'

No problem with dropping a little acid at an indoor meet, but scotch at a cross country meet is totally out of line.
