I have seen several, and read a few books on 5k and up training.
I have an undergrad degree in Exercise Phys. so the scientific ones are fine.
Does anyone have any suggestions on their favorite training books?

Get a copy of Jack Daniel's Running Formula. It does a good job in being scientific, but not too scientific. your running will benefit greatly.
Better training for distance runners by Peter Coe is excellent. I think it would definantly be the best type of book that you are looking for. I didn't understaned some of it and I'm majoring in biology, but I'm sure you would do fine.
what about biographys? i hve to do a report on one for school. i know about the book Pre but are there any other books written one one runner?
I second the Peter Coe/David Martin book (Better Training for Distance Runners). I would also suggest "Road to the Top" by Joe Vigil. It might be tough to find, but you might try Venuesports.
Good luck
Mike
