Missouri Southern's course is right beside the stadium and is a great course. Hosts the Southern Stampede, and has hosted the D. II NCAA's several times. Long straight to start, and the finger loops make it a very good course for spectators. Not hilly but rolling. Great course.
And every major course is a 2k loop which is why staggered starts won work for more than a dozen teams.
Dartmouth has one on the Hanover golf course.

Not a bad course but all the various distances are way short! The 5k course is 4827m. The first "5k" of the 8k and 10k is the short 5k course. The 2nd "5k" of the 10k is the short 5k course but it starts further along the course than the actual start line which means the 2nd half is even shorter than the first half!! Nothing wrong with courses being short, but they should state the actual distances and not try to claim the course is "lightning fast" because of all the stupid times that people run there.
Yes, UW-Parkside is s great one. Right across road from gym / indoor track. Also has a great dog park adjacent to it.
Suprising nobody mentioned Furman
Also USMA West Point did at 1 time but they moved it to Bowdoin Park but without really any of the hills
