The diet isn't an issue. Mormons don't drink alcohol, coffee or tea. Caffeine is not banned, so they can and do drink caffeinated sodas. They don't have any other dietary restrictions.
If you wanted to look at diet, you should look at colleges with a high percentage of Seventh-day Adventists. They are vegetarians and live much longer than the average person.
Diet is not a factor for Mormons with regard to running.
In addition to Ed being a great coach he's also a great guy. Very down to earth and even when he was running in the Olympics he didn't have a big ego.
As for the dietary restrictions, BYU has had Coca-Cola on campus for over 30 years. As soon as caffeine free coke came out it was in the vending machines on campus.
