Spanish speaking may be a bit of a red herring as Spain itself right now is a basket-case and of those countries south of the border, only Brazil is really booming and they speak Portuguese.
In my travels, given the option, I wouldn’t mind settling in either New Zealand or Switzerland.

At first glance I read this as "gf is willing to swallow". I thought, 'Lucky dude but I'm not sure how that's relevant to the situation.'
go with Brazil. Portuguese is not that much different from Spanish or Italian. Plus, $50k can go a long way in Brasil.
