My husband is a Park Ranger. It's a great career, at least with some agencies, though though to get your foot in the door right now.

thanks for the suggestions. Actually, by outdoors I meant more along the lines of working outside of an office type environment. So being in a car probably wouldn't be so bad.
Most of the jobs listed don't seem to require a college degree. Anything for degreed people that don't want to work your typical office corporate job?
outdoor/science education instructor
camp director or program leader
coach
high adventure instructor/leader/guide (climbing, whitewater, mountaneering, skiing, etc.)
outdoor safety (such as lifeguard, ski patrol, river/lake patrol, etc.)
any job in forestry/parks (incl. botanists, zoologists, etc in addition to rangers and admin)
physical education instructor
parks/recreations jobs (direcotrs/coordinators)
gov jobs as chemist, engineer, biologist, etc (in water, power, transportation, etc.)
most of the above in a consulting role
Of course, all the above have various levels of office/desk/lab time, but have at least some diversity in getting out into the field.
The restaurant business might be an option for you.
Any kind of environmental field technician. I'm actually outside about 50% of the time, driving and in the office for most of the rest. I'm like you, I don't like being in the office, but let me tell you, after being out there for weeks on end a few days in the office is a nice change of pace.
With or without a college degree. They won't hold it against you.
