I'm in a similar position, but with a three year old too.
I don't run weekends, trying to fit it all in at lunchtimes.
I'm aiming for 10 miles a day, little bit more one of the days if possible, bit shorter on a couple of days depending on how previous day went.
Running this little, don't see the point in four or five mile runs, might as well make each run worthwile.
Within the daily ten, can cover five miles fast with warm up/down before and after, easy ten, hilly run, fartlek etc.
There's no need for such a long run as you suggest for the level of running we are doing, skews the week too much.
I'm looking at running 32-33 mins 10k, sub 72 half. Maybe you're looking for a bit quicker, but still think similar principles apply.
