There are great running trails right by UBC, called the Endowment Lands. If you are around SFU, there are lots of trails there too. In Richmond, you can run along River, which goes pretty much from Steveston to the airport. Stanley Park is more recreational and is paved. If you are looking for a club, the Kajaks (in Richmond) is the best around.

Sounds like a great place to train.
i would never call stanley park "recreational"! you clearly have never ventured inside. the perimeter is a paved, flat, 6 mile loop but the inside is pure trail. and some of them are quite steep and hard. this is where the kajaks work out on saturday mornings...
Come out to the rugby fields Tuesday and Thursday nights at 6:00, this is when the UBC team and the Kajaks practice, normally a large group with some good high end runners.
Canada bites the big one.
What about Simon Fraser University. They have a couple of decent middle distance guys, a fantastic coach and aparently SFU is considered a very good academic school.

Vancouver has the most incredible trails of any city that I have ever been to. I visited relatives that live in the north shore and there are so many amazing trails up there.
