I'd go to the track very seldom. One possibility is to have a good measured road or flat trail course (but it has to be accurate to ensure threshold running), and if you are doing say 5 X 1mile at T pace, do one on the track to get a feel then go off the track, or do most off the track and finish with one on the track just for reality sake. It's tough for some runners to go round and round, especially when the workout becomes pretty prolonged. Variety can be a great thing for staying keyed up.
