Minnesota also has the Milaca Mega Meet, which they advertised as the largest cross country meet in the nation, but it looks like they are discontinuing it because of the mudfest in 2019, where runners slogged through ankle-deep mud and it ruined the golf course. The Swain meet in Duluth was also famous for the big hill, but that meet has also ended as an invitational. The St. Olaf Showcase is great for the first week of the season, but doesn't have the same aplomb. Another top meet is the Alexandria Lions Invitational.
But yea, Griak is the most storied meet. It looks like they will be holding the state meet there again next year.
I don't know if it is the most "famous" course in Ohio but the course in Cuyahoga Valley National Park is generally considered to be the toughest. It is also a slow course, Very few guys manage to break 17 minutes with most running in the 18:00 to 19:00 range for 5K. The record for the guys is 16:23 by Michael Brajdic. The record for the girls is still held by eventual Olympic steeplechaser Bridget Franek at 19:07.
For Michigan I was going to argue MIS (no - sleep - til Brooklyn), but you might have me beat with Portage.
I was also going to say the Michigan International Speedway (for those who don't know what MIS is). It is the host site for the state championship in all four classes. The course is impossibly fast on a good day (when the ground is hard). Coaches around the state had to shift from training for traditional cross country to more of a track-training mindset to be competitive on that course.
I was coaching in Michigan when the state meet went from four separate locations, on challenging courses, to the MIS Track Meet, and I hated it.
To me, it isn't cross country.
I think a lot of coaches like it because most athletes set personal bests on the course and they can claim that they are great coaches who got their athletes to peak perfectly.

For NY- Sunken Meadows just because.
Bowdoin Park is where the Federation and NXR Meets are.
McQuaid- the course isn't good but it's a huge meet.
They've had states at CV State Park near Binghamton a few times. It's a really good course. I'm from that Section and have run it in a couple open races.
Ivey Redmon hosts the state meet, but id probably say either WakeMed or McAlpine are the most famous, i.e. they host the biggest meets other than states every year and have existed for far longer. In terms of history, Hagan-Stone park is pretty famous as well.
