I remain skeptical. I've reviewed a lot of the evidence. Most of it has a reasonable explanation, but some of it is not as well understood. That doesn't mean it's an alien artifact, of course, but they could possibly represent some phenomenon -- natural or otherwise -- that we're not aware yet. Of course, it could also just be a sensor artifact or visual illusion.
Finally, we must always be cognizant of the fact that a lot of people really want to believe, and a lot of pranksters and grifters really want to sell them on it.
I think it's fair to wait for more evidence. We have a globally distributed sensor network for all kinds of data; if some of those videos on display have any substance to them, we will likely be able to find more convincing evidence.
I think it's clear from the hearings that our government has failed on this issue. And a certain political party has their own negative agenda with respect to UAPs. They want to twist this for their own benefit, truth be damned, full speed ahead, man down the hatches.
A few things: Skunkworks is in Palmdale, not 51. SW is definitely NOT based at Groom Lake. You’re correct regarding the first post war prototypes, but the SR 71 blackbird is actually what that division of Lockheed is known for- not those original prototypes. The SR-71 having much of its testing at Groom Lake. Another note is that Roswell was in the 40’s, with documented aerial phenomena LONG before that. There is a documented crash even in the late 1800’s (Texas?). 51 is associated with uap’s in pop culture (largely due to George Knapp’s expose with Bob Lazar) due to military prototype testing of both reverse engineered as well as actual off world craft are tested/flown, whereas Wright-Patterson AFB is actually the place where most of the recovered crashes are taken and analyzed. Further, UAP tech and associated interest (governmental) has led to extensive studies that fishtail into other anomalies such as abductions, wormholes, antigravity applications, invisibility cloaking, and fusion technology. Most new testing of off world vehicles as well as reverse engineered tech is now done at Dugway Proving Grounds, west of Salt Lake City. You don’t have to believe me, but the above is fairly well known in the appropriate circles, especially with those interested in new tech involving military aviation.

Both craft mentioned were examples of governmental technology that the public was previously unaware of. Alternatively, both of your specific examples are (and have been) in development since the early 90’s. Though refreshing, you certainly give your government much more credit than is appropriate. I'll just point out, as an alternative view for those watching on, that most people with an interest in military aviation accept without question that all sightings of 'UFO's are, in fact, clandestine military aircraft.
The rule of thumb is that whatever you see flying now, is some 20-30 years behind the curve.
There is nothing interesting about area 51, except the fact that it is home to Lockheed's Skunk Works. They managed to not only produce and test the F-117 Nighthawk, but field it operationally before the general public had any idea it even existed.

A nice piece of circumstantial evidence is that UFO mania began in the '50s, which was right around when prototypes of the first generation of post-WWII next-generation aircraft would have been conducting initial tests.

This is completely wrong. If you go by what UFO means, there have been plenty of unidentified flying objects observed. Are they ultimately identified? Sure, maybe. Are some camera artifacts or mishandled equipment, sure. Once identified, then they no longer meet the definition. Now, if you want to say that there have been no credible sightings of alien craft visiting the earth, I would agree with you. But in the strictest definition of UFO, yes there are sightings.
