I just visited a very very good D3 running school and thought the coach was absolutely amazing but the rest of the school didn't do it for me. Yet...I still want to run for that coach and therefore attend. Thoughts? Is that stupid?

The coach may be gone next year. Never go to a school you don’t like because of a coach

This is the only advice you need on the matter.
Doesn't matter the response you might have for it. Coaches get fired, get out on their own, retire. Athletes get injured, quit, find other things.
Please trust me when I say students don't stay at schools they don't love. I did retention studies as part of my job, it's not a truth, it's a self-fulfilling prophecy.
Your first priority is your education. Choose the school that best fits your academic needs. Running XC & Track at the school is secondary.
