To change a bit, can a 2k time trial (in non optimal condition, in the middle of the week, no tapering..) be a good replacement to a VO2max style workout like 8x400m or 6x500m etc. ?

You can do that, but I think a 3K time trial is better.
i use 800-3200 TT's at "high school dual meet effort" as workouts occasionally
great fitness gauge and not a terrible workout
