Your range is 5:18-5:13 pace
Depending upon effort, 5:13 could be your 10k pace. But it is safer to say a little bit slower.

Agree with this. I’d shoot for an even, no faster than 16:20 (assuming you are talking about full miles here. If 1600m’s, then shoot for 16:30) for the first 5k and then try to speed up from there if you feel good
Yeah 3:00 is just a bit much for a 1:1 predictor. I would say that you're still no slower than 5:20ish/mile for 10k off of that. If you progress over the next 6 weeks, you could gain a little more fitness and try to get ready for 5:10-5:15.
Volume is good. Maybe squeeze down the rest time. Try 2 mile reps or a combo of 2/1 miles off of shorter rest when you get closer to your race.
3 x 2 miles (2:00 or less 400 jogs), 2 x 2 miles (2:00) + 2 x mile (:90), repeat the 6 x 1 mile off of 1:00-1:30. Etc.
