Does it really matter which of the three I buy in terms of performance in a 5k road race? I ask because a lot of places are sold out and if I manage to find one of the three at a good price, should I buy it?

Yes, buy whichever one you can, or race in another flat. I'd say next% or next% 2 as a preference.
The Adidas super shoe seems to have worked really well at 5&10 too
where are you still finding 4%s for sale??
Skechers

Here for one. These are an extra extra pair I have. BTW I even use my older ones (200plus miles) for up tempo days and the work well even after their 'racing' days are over.
The 4% is a good shoe, but the Next % gives better foot support in sharp turns.
And somewhat better traction on wet surfaces.
