Years ago, I offered to guide an Australian pro marathoner on a long run on some trails so he wouldn't get lost. In the trailhead parking lot, he weighed himself and then started off on the run carrying an empty water bottle. About 8 miles in, he steps off the trail and takes a leak into the empty water bottle. I was confused, thinking he was some kind of environmental exceptionalist who didn't want to pee in the woods..... No, he was measuring how many ml he was losing from pee. At the end of the run, he weighed himself again and noted his weight and ml of pee in a notebook. That's the most precise way to figure out your sweat rate. :) Other than that method, you can just experiment with getting well hydrated prior to the run, drink what you feel comfortable with during the run and rehydrate after. Read your body as you go. Then you don't have to carry a bottle full of pee for 12 miles.
