The answer could be ‘it doesn’t matter’, but looking to add a couple of doubles to the schedule - are there better days to do them?
Eg PM of workout days for recovery? On easy / daily run days?
Thanks!
What days to double?

As many days as possible.
First days to get the doubles should be workout days. I prefer the easy double to be in the morning before an afternoon workout. -

Good session banked now let’s move on -
What are you training for, and where are you in your training cycle?
I generally wouldn't introduce doubles for the first time in the middle of a specific block. The short term effect of maxing out mileage on singles would be more beneficial than doubling, in my opinion.
If you're in a base phase, and looking to make the jump to a higher mileage, I honestly don't think it matters too much. Personally, I place my doubles in a way that ensures I always get in a recovery run within 12 hours after a workout. For me that means doubling on days with AM workouts, or on easy days if I'm doing PM workouts.
There is some research indicating that this adds to the stimulus of the workout, boosting the total training effect. Anecdotally, however, I just feel that this gets me back to feeling decent again after a workout faster compared to 24 hours of resting.
