Strava does its own distance, elevation and road grade calculations based on the watch's time and location data (latitude/longitude).

By default, I believe Strava defers elevation stats to whatever device uploaded it. So Garmin.
You can edit on your runs afterward if you would like to use Strava's data or Garmin's. Personally, I find Strava's to be more accurate.
This agrees with my experience. I did a track workout recently, and due to some poor GPS watch performance it mapped me going somewhat off the track - so had about 40' of elevation gain for each lap. Strava elevation gain indicated an extremely hilly run for me, which wasn't the case.
