Someone else mentioned gymnastics. The vaulting horse has changed dramatically and the floor has gone from an energy absorbing pad to practically a trampoline
If we don't county PED's as technology or improved nutrition maybe Swimming. Obviously when they had the super suits that changed the game but once they banned those it seems like technology is relatively similar to 50 years ago.
Competitive Weightlifting. Clean and Jerk technology seems about the same.
New shoe technology has not changed running at all.
Breaking world records does not count.
The fast guys are still fast. They all have access to the same tech. It has not changed HOW the run the race.
Starting blacks changed things much more.
As did photo finishing cameras. This changed the way officials awarded the places. There are examples of Olympic races that were awarded incorrectly by todays standards.
In football, technology in helmets and pads changed HOW players were playing, especially tackling. So much so, that not we have all these head injury issues.
In tennis the racket tech changed HOW the game was played. Strategies and tactics were dramatically different in the wooden racket era.

Actually, the swimming pools are designed better that 50 years ago. 'Waves', hit the edge and don't rebound into the swimmer. I think there are other advancements with the pool too.
I would guess Volleyball is one sport that has the least amount of change.

I know less about some of these - some I think are not serious sports - but I would agree about handball, both 1-wall, 3-wall, and 4-wall (not the Olympic team sport, which is completely unrelated, but the sport played in USA and some I hear in Ireland). It is remarkably unchanged since I played in the Collegiate Nationals a couple of years back in the 1970s. Interestingly, it is also a sport in which the level seems not to have climbed through the years; if one had a time machine, a great player from 1972 transported to 2020 would have a fair shot at beating a great player from today. However, I think this is perhaps due to what may be a decrease in the number of people playing the sport rather than because of something technology-related. For those of you who have never played handball, playing it at a high level it is a very demanding sport - I would not include it in a list with minigolf! ;-)

I would disagree with gymnastics. Springier floors have made a huge difference. I would also say the change in the vault apparatus (not sure that is really a tech issue though).
