High hemoglobin values naturally doesn’t mean anything. I also have that. I was also a runner in the Norwegian junior ranks(top three in Norway), but chose a different path with education and job career. My son and daughter also endurance talents(5 and 7) in running and cross country skiing.

Yeah I have high natural hemoglobin values too. I think this could be part of it. I'm in the US but have some Norwegian ancestry.
I recall reading that Scandinavians in general are good at storing/utilizing iron. In fact the genetic disease hemochromatosis (where you store too much iron) has been traced to originate in Scandinavia. Areas where the Vikings have settled (like certain areas in Ireland) also have higher rates of hemochromatosis.
Anecdotally, my sister was able to train her ass off running high mileage in cross country with no ill effects, while all the other girls on her team were getting iron defficiency/low ferritin.
Scandinavians were good at XC skiing long before doping. Also, I do think there's a culture. Orienteering is dominated by Scandinavians.

The only source that you' re giving saying that is a blog post, and the rest of your sources either do not confirm what you said or include seafood !
According to the the FAO, which is actually the governmental organ,ization tasked to collect this kind of data. Argentina, was in 2017, the highest meat consumer per capita in 2017 with 612 kcal/capita/day.
Japan (and E. Asian countries in general) is not even in the top ten with 197 kcal/capita/day. It is an island and its animal protein consumption comes from seafood

Personally i see absolutely no way that a person from Hong Kong eats almost 700 g of meat every day, escpially considering how small they are on average.

I am amused by any implication that seafood, because it is categorized differently for the marketplace, is not in fact meat, i.e. the flesh of members of Kingdom Animalia. Or are polar bears and orcas in fact herbivores?
