Its up to Darren to provide the proof that he IS doing it. Not the other way round.
He could easily do that by providing GPS, heart rate and cadence data.
The very fact that he isn't providing this data is evidence enough for me that he is riding most of the way in the RV.

Being able to cycle 75 miles a day wouldn't automatically mean you could walk across America doing just 25 miles a day. The walk would be far harder.

Good for him. He is pushing through his injury because he is the new face of 50.
He did run a 3:31 marathon at the 2011 rock n roll san diego marathon.
It was once claimed on his athlinks profile however at some point it was removed. It stands out as much faster than his other performances.

You raise some good points and this is interesting.
Let me expand on your scenario. You state you are going to swim the channel.
You start, you get stung, bitten or what ever, but decide to continue, not swimming but in a canoe.
You have a tracker so everyone can see where you are and anyone can join you but you made it clear you are not swimming now but canoeing. Possible?
Would you continue across the channel knowing that at any time if you got into a chase boat you could be called out?
As for the claims he was not injured if any of you took the time and trouble to reach out to his PR guy you would get the facts. He in fact was injured sorry to burst that bubble.
