breakfast is usually 1/2C of oatmeal, $0.60/lb. i get cinnamon, raw sugar, raisins, and cranberries from the cafe at school for free.
lunch is usually PBJ. the bread is whole wheat (no HFCS) for $1.68/1-lb loaf. the PB is adam's all-natural unsalted which i found on sale, 2lbs/$5 (usually about $4/lb, i splurge on that). the jelly is usually knott's apple cinnamon which i take for free from the cafe at school.
dinner is usually beans and rice/quinoa from the crock pot. i splurged and got a 6-qt crock pot. every sunday i add 1/2 of black/red/white/pinto/garbanzo beans, a veggie medley (whatever the produce stand has in season), 1C long grain brown rice (very inexpensive in bulk), 1C quinoa (also inexpensive in bulk). i season it as it cooks, usually several times. by monday evening i have enough for the week. usually re-season when i re-heat it.
i seem to eat pretty cheap. leaves enough money for good beer, which helps the food go down. i vary the veggies and seasoning enough that even though the ingredients are the same the week's dinners have their own taste.
i've also found that tossing in a little vinegar while the beans cook gives them some kick. i do a lot of pickling, so my pickle brine usually ends up in the crock pot as well.
