Mrs. M beat me to it. I was glad I double checked before posting about the Bacon/Maple Bar at Voodoo. Before anyone has doubts about the genius behind this, consider how much we all love pancakes with maple syrup and BACON. Voila! Bacon/Maple Bar.
My kids refer to bacon as "Meat Candy"... god bless 'em.
Men's Journal has a great article this month about Bacon - all different types, based on cure, smoke, etc, etc, and it even explains how the average schelp like you and me can make our own bacon. Just takes a nice pork belly, some curing salt and other spices, a ziplock, a grill set up for indirect heat, and about a week's worth of patience. Makes me drool typing it...

I like my bacon cooked so little that you can roll it up into a little ball to eat it. Breakfast buffets usually have bacon like this.
another recipe. quick and easy bacon pasta.
pasta. cooked and drained.
bacon. lots of it. cook it, drain it, chop it. add to pasta.
saute chopped onions in fat. throw in garlic and saute. pile in loads of something like kale or arugula and wilt it in the fat.
pour mixture over pasta and bacon pieces and toss thoroughly.

yes! love the meaty chewy non crispy bacon.
My bacon wallet is right here on my desk. The only way to make money better, is to store it in bacon.
