You haven't factored that conditions were not perfect today. I ran it. It was quite sunny when buildings didn't provide cover, and while not terribly hot, hotter than optimal to the point that many people were drenched in sweat by mile 5. There is no question to me that the conditions had to have slowed Kipchoge and he was capable of even sub-2:01 today in cloud cover and lower temps.
