Ok, you need simple things that you can create a system out of.

Snacks:
I'd recommend asking them to buy a lot of fruit--that's something that's easy for all parties. One idea: make it a system to eat one banana, one apple, and one orange every day. Also have them get you a big stash of almonds. Fruit + almonds for every snack/tweener meal. Healthy and easy.

Breakfast:
Make your own oatmeal for breakfast. If you use steel cut oats (the best!) it takes a little while, but it's not that hard and it's really good for you. And inexpensive. You could also make a big batch one day a week and then just reheat 1 serving each morning.

Lunch:
??? You can probably make your own, so you should have a decent amount of control. Not sure what's the easiest way to go with this. Ask for whole grain bread for your sandwich? Bringing a piece of fruit with lunch would help. Maybe ask them to buy you carrots to bring each day; carrots are really easy and good for you.

Dinner:
This is probably the only place where you really aren't gonna have a lot of say. Maybe work with them on:
1) Good veges every night. You could get in the habit of helping make a salad or cooking a side dish like spinach or broccoli.
2) Whole grains: whole wheat pasta, brown rice, etc.
