Hi, I'm vegan. Lacking speed strength doesn't seem to be something that is related to diet in my opinion. Keep working on speed-endurance workouts and raw speed workouts. It'll come eventually.
Advice on what to eat? I don't track my calorie or protein intake but I imagine I eat around 3000 cal daily. My general rule is that as long as I'm consuming enough calories, then my protein intake is fine.
Standard day of eating for me:
Breakfast: Whole grain toast & PB, Fruit, Oatmeal, Cereal, waffles, pancakes, etc
Lunch: Stir-fry, sandwiches w/ tofu, salad, soup, hummus & crackers, fruit, pasta, pizza, bean burgers, curry, burritos, etc
Dinner: stir-fry, pasta, sandwiches, pizza, burgers, pad thai, chilly, soup, salads, tacos, burritos, etc
Usually just have leftovers from the prior night's dinner as lunch.
