My coach claims that it’s very important in helping muscles recover or something but has never been able to explain why. Is there even a point to doing it, and if so, why??

In my opinion, static stretching should be reserved for specific injury rehab. I prefer dynamic stretching. If your coach demands you to static stretch, you could just very lightly stretch instead.
Overwhelmingly, runners stretch the wrong way. They stretch cold muscles. They stretch too long. They stretch WAY too hard. For examples of dynamics stretching, look at the warm-up drills sprinters do... lunges, scoops, skips, leg swings, crab walks, striders. These are all examples of dynamic stretching to move the muscles through an extended range of motion.
The purpose of static stretching is to restore normal muscle length and tension. Some of us need to relax, inhibit calm down muscles that have been firing.
