I think it could work quite well. A couple years ago, I tried a mini version of that. I never ran two days in a row, often two days off between runs. Tried to keep 7 miles as my minimum run, and got the longest up to 23 miles.
I enjoyed feeling fresh for each run, and that allowed good quality efforts every time. At age 57, I was able to remain injury-free, and ran 3:25, with negative splits. And, yeah, it was nice to only schedule run-time two or three days a week.
Seems like you could enjoy some of those same benefits, while not sacrificing overall volume like I did. Give it a try! I would be very interested in hearing how it works out.
BTW, the next year, I did more conventional training, six days a week, and dropped 18 minutes off my marathon time. The higher volume was probably the most crucial difference. I am tempted to give your plan a try, myself.
