Interactive treadmills that allow you to have a virtual race against friends or random people at other gyms or even right next to you using real courses with programmed elevation changes. Kind of a quasi-social running method for folks who can’t really get in the roads in the winter.
Well, lets start to narrow it down by looking at some categories:
-Weight/resistance training
-Ball sports (I think this'll require you to invent a new sport)
-Endurance sports (would be along the lines of running to treadmill or cycling to spin bike?)
-Protective equipment
I think protective equipment is what you should focus on, IMO. You can think of something for an already established sport with the added bonus of the topic being in the forefront of the media; ie concussions/athlete safety, etc.

This already exists for indoor cycling (Zwift) so I can imagine it already exists for treadmills?
Some kind of sensor you can wear while running that beeps when you "overstride" which is defined to be reaching ahead with the lower leg upon contact with the ground. Upon foot strike with the ground the lower leg show be almost vertical.

Mercury-style wings for running shoes to increase leg lift and stride length
Football helmets that will prevent CTE
Robotic rabbits that adjust their pace based on your biofeedback, look good in bunhuggers, and will give you a hummer if you pr.

Don't listen to the advice above too much. Read into Product Management as a profession and what its key deliverables are.
Then align the school assignment, which is a silly assignment, along this real-life, sought-after professional methodology.
Way too much emphasis on stroke-of-genius-ideas in society. Not worth much more than lottery dreams.
Real products are made totally different and with a lot more gruntwork.
