Well, you sure didn’t do yourself any favors. But I’m sure the recipient would tell you it was well worth the 20 seconds or so.

Probably 10 to 15 seconds. So realistically it is within the realm of a good day versus just an ok day, not a huge difference.
After those 4 days, your body has replaced all the lost blood volume with plasma. So you are just down about 5 to 10% of your red blood cells. (Depending on your size). 5% fewer RBCs doesnt equate to 5% less power output in your running, since other factors are very important as well and not impacted by your blood donation, so your actual performance drop is much smaller.
This will be more noticeable at altitude than sealevel, where the hematocrit is more of a limiting factor.
In theory, the biggest performance drop should be centered around VO2 max pace races, so roughly 3k.
Make sure you are hydrating properly.
Nothing else you can do.

I made the appointment without realizing I had a race 4 days later, then when I thought about canceling the donation, I slapped myself in the face for thinking that this 5k time mattered at all in the grand scheme of things.
I'm eating beets, red meat, spinach and hydrating. Even if that doesn't help generate red blood cells faster, it makes me more optimistic, which is worth something.

you should be slapping yourself in the face for having donated, not the other way around.
30-60 seconds, more if the race is hilly.
I hope that this is not an important race for you! If your self-assessment of 18:00-18:30 shape is accurate, you have a shot at breaking 20 minutes in the race. Breaking 19 is not very likely.
But hey, you might have underestimated your current fitness level, in which case you *could* have a shot at 19. Good luck!
And for future guidance: Do not donate blood for at least three months before any important race.

You're thinking about this all wrong. If a pint of blood weighs 1.1 lbs (source: random internet site), and you save 10 seconds per mile per pound lost (runners world rule of thumb), you're looking at a benefit of around 34.1 seconds! Big PR coming your way!
