If he lost a bit weight and got down to 135 ibs and put in a hundred miles a week he could make the Olympic B standard for the marathon. I was highly skeptical building up to the race. But, after yesterday no doubt if he put in a few hundred mile weeks he could go sub 2:18.
Well if he wants to cheat for a PR, he can always run Boston.

Mark my words in four years from now in Tokyo he will come in tenth place like how Rod Dixon came in tenth place in the 1984 Olympic marathon. Just need to put in some 200km weeks. Both Rod Dixon and nick started off as middle distant runners who moved up to the marathon.

let's be realistic. what if he runs 45-50 mpw for 3 months, with a couple 18 mile long runs.

Rod Dixon and Nick Symmonds are completely different body types.
Having said that, NS can likely run 2:30 with some work, but he'll never run as fast as RD. Totally different runners.
It had nothing to do with miles per week.

If Nick seriously only ran 25mpw and if he "takes it serious" and runs say 50 mpw for 4 months I'd say he can run sub 2:37 (6 min pace). He was definitely a sub 4 miler and I think a low 14 minute 5k guy. Do not think 6 min miles would be out of reach for someone of that talent level.

He is never going to "take it serious" because he does not have the mental or physical durability to do so. He will work hard if it involves climbing a mountain or something, but he's not going to dedicate 4 months to a flat concrete marathon race.
