I've sort of said I'd love to see pros just go time trial without a watch to see how'd they do or even race without splits. Now there's a least one race doing this.

I think Edward Cheserek, the Hawaiian Mile King, is wearing a watch in the photo you posted. Maybe he didn’t look at it to see how he was doing.

It was on the road with no markers set up at the quarter, half, etc. Since it was an out and back, the half mile is approximately knowable to within maybe 15 meters.
But looking at his watch would have been pointless anywhere else.
