Announcing gold as her goal makes perfect sense. It makes for a much bigger story, and anything less for someone with her resume would just raise the question, "why bother?" Also, even though it's a tall order, nobody really knows her potential, so it's not like she's saying she wants to do something that is obviously unrealistic.
As for making the team, obviously she doesn't have to beat ALL of those people, but I agree that she'll have her work cut out for her. Hasay and Huddle are probably locks, barring injury, so that only leaves one spot.
