What would be more beneficial.. one day of rest a week or a super easy short run of like 4 miles @ 8:00ppm to act as a rest day?

Ive been doing a mix of both. Ill probably go 3 weeks with runs every day, then once a month ill do a pure rest day. Usually happens after a mix of racing, workouts and an exhausting day at work making me have a gut feeling that today is a good day to take off. Most of the time though when I want to take a day off I do a really relaxed 4 miles instead.

If you are doing 4 miles, that is not a "rest" day to me.
Also, this is not a binary answer. At times the rest day will be more beneficial. Other times an easy recovery run will be better.

What kind of 5K/10K shape are you in right now? 8 min pace might feel super easy for one guy but might be another's regular training pace.
@party animal - he meant at 8pm, not 8 min mile pace. It was an odd fact to put in there admittedly, so I understood why you asked.
@Luv2Run I would disagree but that's from my own point of view, it depends on what kind of shape / mileage the OP is actually doing. If they're doing at least 40, I would argue that its a rest day. If less, then I'd agree with you.
Typically 4 miles is a 30 min run for a relatively good runner, so I would say its a good recovery day.
Ill walk or short run 1-2 miles with a few strides instead of a rest day.
