Would running 3 miles in the morning every day over the summer yield better times than when i was running once a day? Id go from roughly 35-40 miles per week to 55ish. Would these just be junk miles or would they actually help.

Not when you're only running 55. If you are running 65-70+ then doubling is smart. You need to build a higher base and be able to handle around 7 mile runs daily before you worry about that. Talk to your coach if you have one.
