Someone I train with who was a 29min 10K guy beat Seb Coe in a local 5 miler during Coe's prime. He never shuts up about it!

His 1979 NCAA X-C Race doesn't count lol.
I beat him in the Rochester Lilac Festival 10k in the early 80's.
I ran about 34ish- it was a brutally hot day and I remember him looking at me when I passed him.
His shirt said- I am Henry Rono.

Agreed. I've taken down a 60 year old Bill Rodgers which counts for nothing because it was by 30 minutes in a 10k because he was 60.
I'm guessing the Alan Webb scalp is mostly from that Portland cross country series that he dabbles in now (probably for fun). I think that's very different from when he was a serious miler.
I beat a ton of runners I shouldn't have even been in sniffing distance of in 2007 at the New Englands Cross Country Championships because of the heat. It was ridiculously hot, but I had trained in high heat all summer. People we're bonking and puking, I was only a 26:30 8k guy, and started passing people I had never dreamed of beating including my high school rival that I had never beat before. Love the heat!
I beat this one guy who must have weighed over 300 pounds. He was so fat he could barely walk.
Ed Sheehan 2:13 MARATHON
Beat Ed in high school XC
Not exactly the same but I did beat Dan O'brien in the Shot Put once.
I beat Andrew Bumbalough once in a 10K, but he was sick. Still, was pretty cool.
Beat some Olympians and
I have beaten a few Kenyans with 2:10-2:12 PRs back in the day that digressed to about 2:20 level by the time I raced them, and were having a bad day and could not even run 2:30 on that particular day, but still finished (rarity, but it does happen :-) ). That, and Ed Eyestone during the window (around 2007) when he was still racing but has gotten sufficiently slow for me to beat him.
I beat Al Salazar and Dick Beardsley in the TC 10 mile. They are only a little older than me. I think Beardsley could have beaten me, but he ran with Salazar, who was struggling.
I also beat Frank Shorter, but it was a race in Hawaii where he was obviously paid an appearance fee, and he is quite a bit older than me.

Most of my post disappeared. Yes some Olympians, 2:09/2:10 marathoners but we were well past our prime. Perhaps the most interesting W was eking out a place or two ahead of Mark Wetmore in an XC race back in the days before he was coach at CU.
I beat Nick Willis in a 1500 the first year he broke 3:30, admittedly he had just raced the 800m at my local club night and ran an 8 minute 15 as a warm down with the little kids.
I beat Frank Shorter in the 1993 inaugural Big Sur 5k.
Suckit Frank.
Craig Mottram.
I owned Joe LeMay in H.S. XC, OWNED him I tell you!!! He was a year behind me, we both ran for Ridgewood H.S. in NJ. He never even came close to me in the 3 years and all those races we were in together. In his defense, he really sucked at XC in H.S.. For those that never heard of him, pretty remarkable career, went 2:13 in the marathon and 28:00 10K, with great performances at the Olympic trials. Not too shabby for a guy who is 6'4"!!!

Henry Rono
Don Kardong
nikeman ....... many times.
Marty Liquori in the 1978 Florida Relays marathon. Yes, I was racing and he was doing a training run, but, a win is a win. :-)
