Sandy has far more people following her than Mimi does. On Strava Sandy get more than 500 thumbs up each event and some 10 comments. Mimi get about 200 thumbs up and just a few comments. Then there are the boots on the ground. Sandy get random people joining her every day now. With Mimi it seems no one has tagged along.

Let's get down to simple math and add up Sandy's shoe string budget (assuming this is a 56 day affair.)
2 volunteer crew members $0
volunteer guest crew members $0
Groceries and supplies for crew members and Sandy $1,500/week = $12,000
Rental for crew car $30/day + $300 returning car in NYC fee = $1,980
Generous loan of RV for free = $0
Gas for RV at 10 miles per gallon ($3/gal) 4,000 miles (3100 miles across America + 900 miles of misc driving around) = $1,200
Gas for RV to return from NYC to west coast 3,000 miles = $900
Wear and tear of RV at $0.25 / mile, 6,500 = $1,625*
Gas for crew car, 20 miles per gallon 4,000 miles = $600
50% of the night on the road at an RV Park for $30/night = $840
Lodging at a kind ultra runner's home in NYC (rather than paying $400/night) for 2 nights = $0

If a Marathon gave you two course options, one at 26.2 and one at 28.0, your time is still determined by when you reach the finish line, not your average pace.
It's entirely possible (or was before injury) for Mimi to finish the shorter distance faster (in calendar days) while Sandy finishes the longer distance with a higher average pace but slower "crossing time".
The record matters most, but the record is total time, not average pace. Sandy can still take the record by arriving up to 4 days after Mimi does (in which case Mimi would have temporarily had the record) but she also has built in a 7% mileage penalty and has to run 7% faster just to tie.
