Because back then they didn't have a ton of black, asians, and indians hanging around so they needed to find some subgroup to discriminate against. Just think back to US history when The german/northern european/english groups tried to discriminate against polish, irish, and italian immigrants for not being white enough.
Oddly enough, savages back then conquered, then normally murdered the men, boys, and women, saving young girls for their soldiers. But the English savages preferred young Irish boys for their soldiers. The rest is history.

More than likely it is because you weren't available for them to consult regarding them all looking alike...
UK usually took their potatos. But in a famine situation where the usual totals were cut by 75% --due to the rot-- that meant there would be none left for the Irish. So the British took their cut anyway and let Ire with nothing. The end.
