I'm at the point in my summer training where, despite running twice a day, I am still pressed for time to cook and eat dinner and still get to bed at a reasonable hour. Working full time and putting in good mileage makes it difficult to cook quality meals in a quick manner so that I can get my rest.
So, do any of you have go-to recipes for dinner that you use when on a time crunch? Preferably ones that support a healthy runner's lifestyle.
I can only eat grilled chicken avocado salads for so long...
